Winemaking: Grapes are picked by hand, placed into small lug boxes and transported to the cellar in a cool truck. In the cellar, the whole berries are manually double sorted and then gravity fed into fermentors. Each batch is cold soaked for a few days and then slowly brought up in temperature. Fermentation takes place naturally. The wines are aged for 18 to 24 months in 100% new French oak, bottled unfiltered and bottle aged for one year before release.

Winemaking: Each batch of grapes is cold soaked for a few days and then slowly brought up in temperature. Malolactic fermentation occurred naturally in the barrel. The wines are aged for 18 to 24 months in 100% percent new French oak, bottled unfiltered, and bottle aged for one year before release.

Winemaking: The wines are handled separately by variety and lot. After cold soaking, fermentation starts and lasts for about 20 days. Malolactic fermentation takes place in new French oak barrels and wooden tanks. The wines are aged separately for 18 months in French oak barrels. The wines are blended and aged for a further six months in barrel and tank- and bottle-matured for 24 months before release.
